Instructions

  1. To prep the TVP add equal parts tvp and equal parts boiling water to a bowl with the vegan beef stock powder, mix well before covering and leaving to rest whilst you prep the other stuff.
  2. Slice your capsicum and broccolini into thin slices ready to stir fry.
  3. Dice your pico de gallo ingredients and set aside.
  4. For the chipotle mayo mix all of the ingredients together and add to a sauce bottle if you’d like to do a fancy drizzle topping.
  5. Fry the tvp until starting to brown then sprinkle in the paprika, cumin, garlic granules and oregano. Stir to combine.
  6. At the same time in a separate pan fry the broccoli and capsicum slices until soft.
  7. To serve add a layer of the rice & grain mix to the bowl and top with your protein and veggies. Add a sprinkle of cheese and a generous helping of the chipotle mayo.
