No Knead Rustic Artisan Bread Recipe

The Scent of a Memory

The smell of baking bread fills my kitchen now. It reminds me of my grandmother’s house. She always had a fresh loaf cooling on her counter. That warm, yeasty scent meant comfort and home. Ever wondered how you could turn simple ingredients into something unforgettable? This recipe brings that feeling right to your table. It mixes sweet cranberries and rich pecans into the dough. Your whole house will smell amazing while it bakes.

My First Loaf Adventure

My first try with this bread was messy. The dough was very sticky and I worried. I almost added too much extra flour. But I trusted the process and let it be. The result was a wonderfully rustic, delicious loaf. This taught me a good life lesson. Sometimes, less fussing leads to the best results. Home cooking is about the joy in the attempt. A perfect mess can still taste perfect.

Why This Bread Tastes So Good

Let’s talk about what makes this bread special. The crust gets incredibly crisp from the Dutch oven steam. Inside, the crumb stays soft and chewy. Sweet cranberries and toasty pecans create little bursts of flavor. Which flavor combo surprises you most? Tell me in the comments! I also love the no-knead method. It makes artisan-style bread possible for anyone.

A Slice of History

This style of bread has deep roots. It comes from a long tradition of rustic, hearth-baked loaves. Bakers used simple ingredients and wild yeast for centuries. The Dutch oven method mimics an old-fashioned baker’s oven. *Did you know the “no-knead” trend became huge in the 2000s?* It made great bread easy for home cooks. Now, what will you serve with your first slice? Share your ideas with me!

Let’s Make Some No-Knead Cranberry Pecan Bread

Step 1
Start by waking up your yeast. Mix lukewarm water with honey. Stir in yeast, cover, and wait ten minutes. It should look foamy and bubbly when ready.

Step 2
Grab a large mixing bowl. Combine your flour, salt, dried cranberries, and diced pecans. Give this dry mix a good stir with a spoon.

Step 3
Pour the foamy yeast water into your flour bowl. Fold everything together with a spatula. Finish mixing with your hands into a rough, sticky ball. (A hard-learned tip: wet your hands to handle sticky dough easily.)

Step 4
Place dough in a greased Instant Pot. Cover and set to Yogurt mode for four hours. The dough will double in size and look puffy.

Step 5
After rising, flour your counter. Gently shape dough into a ball without kneading. Let it rest while your oven preheats to 450°F.

Step 6
Heat a Dutch oven in your hot oven. Carefully remove it and line with parchment paper. Gently place your dough ball inside.

Step 7
Bake covered for thirty minutes. Then remove the lid. Bake fifteen more minutes until the crust is deep golden brown.

Step 8
Transfer bread to a cooling rack. Wait at least thirty minutes before slicing. This wait makes for a perfect crumb.

Storing Your Rustic Loaf

Let the bread cool completely first. Store it in a paper bag for a day. Use a plastic bag for longer storage. It keeps for three days. For the freezer, wrap slices tightly. They last for two months. Thaw slices at room temperature.

To reheat, use your oven or toaster. A quick bake makes the crust crisp again. My grandson loves it warm with butter. You can double the batch easily. Why does this matter? Fresh bread avoids store-bought preservatives. Freeze one loaf for a busy week. What’s your favorite thing to eat with fresh bread?

Simple Troubleshooting Tips

Dough not rising? Check your yeast date. Use lukewarm water, not hot. Hot water will kill the yeast. No instant pot? A warm oven works too. Just let the dough sit covered. Bread too dense? You might have overworked it.

Gently shape it into a ball. Sticky dough is normal, just use flour. Add a little flour to your hands. Burnt bottom? Use parchment paper as a shield. *A baking sheet under the pot helps too.* Why does this matter? Small fixes build your baking confidence. Have you run into any other bread problems?

Description

A simple, no-knead artisan bread with sweet cranberries and crunchy pecans, proofed in an Instant Pot and baked to perfection in a Dutch oven.

Ingredients

Instructions

  1. Mix lukewarm water with honey, stir to combine. Add in yeast, cover and wait about 10 minutes. Mixture will look foamy.
  2. In a large bowl combine flour, salt, cranberries and pecan. Set aside.
  3. Pour yeast water into the flour bowl. Using a wooden spatula fold until all the flour are incorporated. You can finish this step using your hands, to fold into a ball/ loaf. Dough will be sticky and surface uneven.
  4. Place the bread dough in a greased instant pot, cover and turn pot on yogurt mode for 4 hours*. At the end the dough will be twice the size and have lost the round shape.
  5. When the time is up, add a little bit of flour to your counter/ working surface and transfer the bread dough from the instant pot to the prepared surface. Roll dough into a ball without overworking it, tucking any extra dough on to the bottom side. Let the bread sit on the counter while you pre-heat the oven.
  6. Place a dutch oven, cast iron or any oven-safe deep pan with cover in the oven and pre-heat to 450F. When oven is heated to 450F carefully remove dutch oven and sit it on a towel and line with parchment paper.
  7. Carefully place bread dough in the dutch over, cover and return to oven. Bake for 30 minutes covered. Remove lid and bake for an additional 15 minutes un-covered or until bread crust is nice and brown.
  8. Transfer to a cooling rack for at least 30 minutes. It can be served warm after that or wait until bread is completely cooled before you store it away.

Notes

*If you don’t have an Instant Pot, you can let the dough rise at room temperature in a covered bowl for 8-12 hours, or until doubled in size.
