- To Marinate the Chicken: Trim the chicken thighs to get rid of any excess fat. Then, cut the chicken into chunks. Add the chicken into a large mixing bowl and add the Shaoxing or Sherry wine, kosher salt and black pepper, garlic powder, onion powder, and egg. Mix everything together until well combined. Set aside and allow the chicken to marinate for at least 30 ish minutes, or overnight in the fridge.
- To Make the Batter: In another bowl, whisk together the flour, cornstarch, baking powder, kosher salt, black pepper, onion powder, garlic powder. Then add the water and egg and mix until no more dry clumps of flour are visible. Add the oil and vinegar and mix until well combined. (Should you decide to marinate the chicken overnight, just make the batter right before using).
- To Make the Sauce: Into a saucepot, mix together the water, pineapple juice, vinegar, ketchup, light brown sugar, kosher salt and black pepper. Bring the sauce to a boil, be sure to continue mixing and keep an eye out until the sugar has dissolved. Reduce the heat to low. Combine the cornstarch and cold water to prepare the “slurry”. Slowly add the slurry to the sweet and sour sauce. Once added, increase the heat just a little so that the sauce goes back up to a simmer and allow the sauce to cook until it’s thickened up a bit. Set the finished sauce aside and keep it covered until needed.
- To Fry the Chicken: Heat about 1-2 inches (about half of the pot) of canola oil in a dutch oven or large pot to 350°F. Coat the marinated chicken pieces in the batter. Fry a few pieces of the chicken at a time to prevent overcrowding the pot until lightly brown, about 4-5 minutes. Once you fry all of the first batch of chicken for 2 minutes, let that batch sit on a wire rack to drain off any excess oil. Then start your second fry for another 3-4 ish minutes until golden brown and crispy.
- To Make the Veggies & Assemble: While the chicken is frying, add a little canola oil to a large skillet over medium heat and saute the peppers and onion just until the onions are translucent and the peppers are tender. Pour in the sauce, then toss in your chicken (that’s been double fried). Serve over rice, enjoy!
