  3. Boil the pasta in salted water until cooked through. Reserve some pasta water.
  4. Wilt the spinach in the microwave or blanch in boiling water for one minute.
  5. Drain the soaked sunflower seeds.
  6. Add the wilted spinach to the blender cup with the soaked sunflower seeds, 80ml water, nutritional yeast, salt, pepper and garlic granules.
  7. Blend until a smooth sauce is formed.
  8. Stir the sauce through the pasta adding some extra pasta water if needed.
  9. Serve up in bowls topped with the tofu ricotta, a drizzle of olive oil and some chilli flakes.

Notes
