Garlic Parmesan Chicken Pasta Recipe

The First Bite

I remember my first taste of this pasta. The creamy sauce coated my tongue. The garlic and parmesan sang together. It felt like a warm hug on a plate. Ever wondered how a simple chicken pasta becomes unforgettable? That meal made me a believer. Good food creates lasting memories. It turns a Tuesday into something special. I knew I had to learn the recipe. My kitchen adventures began right there.

My Kitchen Mishap

My first try had a funny mistake. I was talking and added the lemon juice too early. The sauce looked a bit curdled for a second. I was so worried! But I kept stirring and it came together. This taught me a great life lesson. Cooking, like life, is often about gentle recovery. A small stumble does not ruin the whole dish. Home cooking matters because it is forgiving. It lets us learn and improve with every attempt.

Why It Tastes So Good

Two things make this dish truly stand out. First, coating the chicken in cornflour gives it a perfect golden crust. Second, the lemon juice at the end is the secret. It cuts through the rich cream beautifully. The textures are wonderful too. You get tender chicken and silky pasta in one bite. Which flavor combo surprises you most here? Is it the garlic and parmesan or the cream and lemon? Tell me your thoughts in the comments below.

A Dish With History

This recipe is a modern American classic. It comes from a love of Italian-American flavors. Think creamy Alfredo meets hearty chicken. It became a family favorite in the late 20th century. It is perfect for a busy weeknight. *Did you know real Parmigiano-Reggiano cheese is aged for over a year?* That aging gives it that deep, nutty taste. Using a good parmesan makes a real difference. Will you try making this for your family this week? Share a picture if you do!

Step 1
Cook your linguine in salted water. Save one cup of that starchy water. You will need it later for the sauce.

Step 2
Chop chicken into bite-sized pieces. Toss them with cornflour and seasonings. This coating makes the chicken golden and crispy.

Step 3
Heat oil in a large pan. Cook the chicken until golden and cooked through. Set the chicken aside on a plate.

Step 4
Cook chopped onion in the same pan. Add garlic, salt, and pepper. Cook just until you smell that wonderful garlic.

Step 5
Pour in chicken stock and cream. Let it bubble gently for three minutes. (Hard-learned tip: Use strong stock for the best flavor).

Step 6
Stir lemon juice into the creamy sauce. Add the drained pasta and grated parmesan. Toss it all together until coated.

Step 7
Add splashes of the saved pasta water. This makes the sauce silky and helps it cling. Add the cooked chicken back in.

Step 8
Serve immediately with fresh parsley and more parmesan. Enjoy the creamy, garlicky goodness. What is your favorite pasta shape for creamy sauces? Share below!

The Spring Fresh

How to Serve It Up

This pasta is a full meal by itself. A simple side can make it even better. Try a crisp green salad with lemon dressing. Garlic bread is always a welcome friend for dipping.

For drinks, a chilled glass of pinot grigio pairs nicely. A non-alcoholic lemonade or sparkling water works too. The lemon notes are so refreshing.

Garlic bread or a green salad? Which would you choose tonight?

Keeping Your Pasta Perfect

Store leftovers in a sealed container in the fridge. They will keep for three days. Reheat gently in a pan with a splash of milk or stock. This prevents the sauce from drying out. You can also freeze this meal for up to three months.

Thaw it overnight in the fridge before reheating. I always make a double batch for busy weeks. My grandkids call it my “magic freezer pasta.” Why does this matter? A ready-made meal saves time and reduces stress on tough days. Do you have a favorite meal to batch-cook for your family?

Quick Fixes for Common Hiccups

Is your sauce too thin? Let it simmer for a few more minutes. The cream will reduce and thicken nicely. Is your sauce too thick? Use your reserved pasta water. Add a splash and stir until it looks right.

Is the chicken not browning? Your pan might be too crowded. Cook the chicken in two batches for better color. This ensures a golden crust. Why does this matter? Proper browning adds a ton of flavor to the whole dish. *Fun fact: that golden color is called the Maillard reaction.* Have you ever had a sauce disaster you fixed?

Description

A creamy, flavorful pasta dish with tender chicken, garlic, and parmesan cheese.

Ingredients

Instructions

  1. Cook the pasta as per the pack instructions, then drain, reserving 1 cup of the pasta cooking water.
  2. Whilst the pasta is cooking, prepare the chicken. Place the chicken in a bowl and sprinkle over the cornflour, salt, pepper and garlic powder. Toss together to coat.
  3. Add the oil to a large frying pan and heat over a medium heat.
  4. When the oil is hot, add the chicken and fry for 6-7 minutes, turning occasionally, until the chicken is golden and cooked throughout.
  5. Remove the chicken from the pan and place in a warm bowl.
  6. There should still be a little oil in the pan, if not, add a little splash more along with the chopped onion. Cook for 2-3 minutes, stirring often, until the onions are just starting to soften.
  7. Add the garlic, salt, and pepper to the pan and cook for 1 minute.
  8. Stir in the stock and cream and bring to the boil. Simmer gently for 3 minutes, until slightly thickened.
  9. Stir in the lemon juice.
  10. By now your pasta should be ready. Add the pasta to the pan, then sprinkle over the parmesan.
  11. Use a set of tongs to lift and drop the pasta in the sauce, until the pasta is fully coated in the sauce.
  12. If you would like to loosen up the sauce a little, add in splashes of the reserved pasta water, until the sauce consistency is to your liking.
  13. Add the cookied chicken back to the pan and stir through. Heat for a further minute to ensure the chicken is hot, then turn off the heat.
  14. Divide between bowls and top with chopped parsley and an extra sprinkling of black pepper and grated parmesan.

Notes

For a lighter version, you can use half-and-half instead of heavy cream, but the sauce will be thinner. Freshly grated parmesan melts much better than pre-grated.
