Klobasnek Texas Sausage Kolache Recipe

The Smell of a Texas Morning

I first smelled them at a roadside bakery. Warm dough and savory sausage filled the air. I took one bite and was instantly hooked. The soft bread hugged the juicy sausage perfectly. Ever wondered how to bring that cozy bakery magic home? This recipe does just that. It turns simple ingredients into a special treat. That first taste created a core memory for me. Now I want you to have that same joy.

My First Batch of Dough

My first try was a bit messy. The dough was very sticky and I panicked. I added too much extra flour while kneading. The kolaches were still tasty but a bit dense. This taught me patience matters more than perfection in cooking. Home cooking connects us to real, simple food. It is about the love you mix into the bowl. That messy first batch is still a happy memory. Have you ever had a kitchen mishap turn out okay?

Why The Taste Wins

Two things make this snack truly special. First, the soft, slightly sweet bread dough. Second, the salty, savory sausage inside. The contrast is what makes every bite interesting. Brushing with butter twice gives a golden, rich finish. Which part of the flavor combo surprises you most: the sweet dough or the savory filling? Share your thought in the comments below. I love hearing what catches your attention.

A Tasty Piece of History

This treat has roots in Czech pastry called kolache. Czech immigrants brought it to Texas long ago. Texans then added sausage, creating the “klobasnek.” It became a staple in local bakeries and shops. *Did you know the name “kolache” often refers to the sweet fruit version?* The savory one is technically the klobasnek. This mix of cultures created a beloved state snack. Will you be trying this piece of tasty history soon?

How to Make Texas Sausage Kolaches

Let’s make a Texas bakery favorite. These are perfect for a weekend breakfast. Follow these steps for soft, golden sausage buns.

Step 1
Wake up your yeast first. Mix it with warm water and a little sugar. Wait until it gets bubbly and foamy. This proves your yeast is alive and ready.

Step 2
Combine the milk, sugar, and melted shortening in a big bowl. Stir in the yeast mix and egg yolk. Add the flour one cup at a time. You will get a very sticky dough.

Step 3
Knead the dough on a floured surface. Do this for a full ten minutes. (A hard-learned tip: set a timer! It’s longer than you think). The dough will become smooth and elastic. Let it rise in a warm spot for one hour.

Step 4
Punch the risen dough down gently. Roll it into a large rectangle on your counter. Cut the dough into twelve even squares. This makes wrapping the sausages much easier.

Step 5
Place a sausage link on each dough square. Stretch the dough up and around the meat. Pinch the seams tightly to seal it inside. Try to have more dough on top than bottom.

Step 6
Set each bun seam-side down on a pan. Brush them with melted butter for flavor. Let them rise again for thirty minutes. They will get nice and puffy.

Step 7
Bake until the tops are a beautiful golden brown. Brush them with more butter right after baking. Let them cool for just ten minutes. Then you can dig in!

Three Tasty Twists on the Classic

This recipe is wonderfully flexible. You can fill it with almost anything. Try one of these fun spins for your next batch.

Spicy Jalapeño & Cheese
Add a slice of pepper jack cheese with the sausage. Tuck in a few fresh jalapeño slices too. It gives a great kick.

Pizza Pocket Style
Use a slice of pepperoni and a mozzarella cheese stick. Add a spoonful of pizza sauce before sealing. Kids absolutely love this version.

Apple & Sage Breakfast
Use a chicken apple sausage link instead. Add a pinch of dried sage to the dough. It feels like a fall morning.

Serving Your Fresh Kolaches

These are a meal all by themselves. But a few extras make them even better. Here are my favorite ways to serve them.

For sides, try spicy mustard or a cool ranch dip. A simple fruit salad balances the rich sausage. *Fun fact: In Texas, these are often sold at gas stations!*

Pair them with strong black coffee or cold orange juice. For a weekend treat, a light lager beer works well. The bubbles cut through the richness nicely.

Which would you choose tonight: coffee, juice, or a cold beer?

Keeping Your Kolaches Fresh

Store cooled kolaches in an airtight container. They stay fresh on the counter for two days. For longer storage, freeze them for up to three months. Reheat in a warm oven for the best texture. This brings back that just-baked feel.

I always make a double batch for the freezer. My grandkids grab them for quick school mornings. Having homemade food ready matters. It saves money and starts the day right. What’s your favorite make-ahead breakfast? Share your go-to recipe in the comments.

Simple Troubleshooting Tips

Is your dough not rising? Check your yeast water temperature. It should feel warm, not hot, on your wrist. Dough too sticky while shaping? Just add a tiny bit more flour. Patience helps here.

Are your seams opening while baking? Pinch the dough tightly and place seam-side down. A good seal keeps the sausage tucked in. Finally, if tops brown too fast, tent them with foil. This lets the sausage heat through without burning.

Your Kolache Questions Answered

Can I make these gluten-free?
Use a 1-to-1 gluten-free bread flour blend. Results will be a bit more dense but still tasty.

How far ahead can I make them?
Shape them and freeze before the second rise. Bake straight from the freezer, adding a few extra minutes.

What sausage swaps work?
Try little smokies or even a cheese stick. *Fun fact: In Texas, some bakeries use jalapeño sausage!*

Can I halve or double this recipe?
Yes, it scales beautifully. Just keep all ingredient proportions the same.

Why brush with so much butter?
It gives a soft, golden crust. It’s the secret to that bakery-style finish. Do you prefer butter or an egg wash for browning? Let me know.

Description

A classic Texas pastry featuring fluffy, buttery dough wrapped around a savory breakfast sausage link.

Ingredients

Instructions

  1. Activate yeast. Combine warm water, yeast, and 1 tsp. of sugar in small bowl. Stir and let sit for 10 minutes. Yeast should be bubbly and have doubled in size.
  2. In a large bowl, stir together sugar, milk, melted shortening, salt and the egg yolk. Stir in yeast mixture. Add 1 cup of sifted bread flour at a time until 3 cups are added. Stir until a sticky dough starts to form.
  3. Sprinkle the remaining ⅓ cup bread flour on a hard work surface, turn the dough out onto the surface and knead for 10-12 minutes. Dough will be sticky and elastic. Transfer dough into a lightly greased bowl, cover and let rise in a warm place for 1 hour.
  4. Punch dough down. Turn out dough onto a lightly floured surface. Shape dough into a 9” X 12 “rectangle. Using a pastry or pizza cutter, cut dough evenly into twelve 3” X 3” squares.
  5. Place sausage in center of each piece of dough. You can flatten dough a little more if needed. Bring sides around sausage and pinch in the center the to form a seam. You are trying to have more dough on top than the bottom. Pull and stretch top and bottom dough around sausage and pinch to merge with center seam.
  6. Place filled sausage kolaches seam side down on a lightly greased baking sheet at least 1-2 inches apart. Brush liberally with melted butter. Cover and let rise for 30 minutes.
  7. Bake in preheated oven at 350°F for 30-35 minutes or until tops are golden brown and sausage is reheated. Remove from oven and brush with additional melted butter. Let kolaches cool for 10 minutes.

Notes

Ensure your yeast is fresh for proper rising. Letting the dough rise in a warm, draft-free spot is key for light and fluffy kolaches.
