Easy Asparagus Dill Soup Recipe

Why This Soup Feels Like Spring

I first tasted this soup at a friend’s garden lunch. The bright green color caught my eye immediately. Its fresh, herby smell promised something light and delicious. Ever wondered how a simple vegetable soup could taste so luxurious? One spoonful of that creamy dill and asparagus blend won me over. It was like eating sunshine from a bowl. That memory comes back every time I make it now.

My First Soup Adventure

My first try taught me a valuable lesson. I was so excited that I added the asparagus too early. It cooked for too long and lost its vibrant green color. The soup still tasted fine, but it looked a bit dull. This small mistake showed me why timing in cooking matters. It is about respecting each ingredient. Now I watch the pot carefully for that perfect, bright green.

The Magic in Your Bowl

Two things make this soup truly special. First, the lemon zest wakes up all the other flavors. Second, the cream creates a wonderfully smooth texture. It turns a simple puree into a silky delight. The fresh dill adds a garden-fresh note you cannot get from dried. Which flavor combo surprises you most: the lemon with dill or the cream with asparagus? Tell me in the comments below!

A Brief History of Green Soup

Pureed vegetable soups are classics in many places. They are practical, using what is fresh and available. This version feels inspired by spring gardens across Europe and North America. It is a modern take on a timeless, thrifty idea. *Did you know asparagus is related to onions and lilies?* This recipe is a celebration of that seasonal bounty. Step 2
Warm oil in your big soup pot. Cook the onion and celery until soft. Add the garlic next and cook for one minute. Your kitchen will smell amazing already.

Step 3
Pour in the water and add the potatoes. Bring it to a boil, then simmer. Cook until potatoes begin to get tender. This takes about five to seven minutes.

Step 4
Add the asparagus pieces to the pot. Simmer until they are tender and bright green. (A hard-learned tip: do not overcook the asparagus!). Rescue a few tips for your garnish.

Step 5
Mix in the lemon zest, juice, and most dill. Use your immersion blender to puree everything smooth. Stir in the cream and saved asparagus tips. Season with salt and pepper, then warm through.

Serving Your Masterpiece

Ladle the hot soup into bowls. Top with extra dill or parsley. A dollop of sour cream adds a nice cool touch. Serve it with crusty bread for dipping.

For a drink, try crisp white wine or chilled sparkling water. A squeeze of lemon in the water is perfect. *Fun fact: dill and asparagus are both spring herbs!*

Keep Your Soup Fresh

Let your soup cool completely first. Store it in the fridge for up to four days. Reheat it gently on the stove. Do not let it boil. Freeze it for up to three months in airtight containers. Thaw it overnight in your fridge before reheating. This soup is perfect for batch cooking. Make a double batch on a Sunday. You will have easy, green lunches all week. My neighbor Jane swears by this method. What is your favorite make-ahead soup?

Quick Fixes for Common Hiccups

Is your soup too thin? Simmer it longer to reduce. Stir it often. Is it too thick? Just add a splash of water or broth. Stir until it is just right. Did the asparagus lose its bright color? You cooked it a bit too long. That is okay. The flavor is still wonderful. *Fun fact: Adding the lemon juice helps keep the green color vibrant.* Why does this matter? A pretty soup makes the meal feel special. It is a feast for your eyes first.

Description

A creamy, vibrant soup that highlights the fresh flavors of asparagus and dill, perfect for a light lunch or starter.

Ingredients

Instructions

  1. Finely chop the onion, garlic and celery stalk.
  2. Wash asparagus spears and either snap off wooden ends or peel the ends with a vegetable peeler. Cut the asparagus into 1-2 inch pieces.
  3. Peel potatoes and chop into smaller pieces.
  4. In a large pot, melt oil or butter over medium heat. Add onion and celery and cook until translucent, about 5 minutes.
  5. Add garlic and cook for another minute until fragrant.
  6. Add water and potatoes to pot.
  7. Bring to a boil, then reduce heat and simmer for 5-7 minutes or until potatoes starts to soften.
  8. Add asparagus and simmer on low heat until asparagus is tender, but still nice and green, about 4-5 minutes.
  9. Scoop out about 10 asparagus spear heads to use as garnish and place in small side dish. Once you have blended the soup, you will add them back in.
  10. Add the lemon zest, fresh lemon juice and 2/3 of the fresh dill to the soup pot.
  11. Using a hand-held immersion blender (or transfer to a food processor) puree soup until smooth.
  12. Stir in heavy cream and the rest of the fresh dill and the asparagus heads you scooped out previously. Season with salt and pepper.
  13. Heat through but do not boil.
  14. Serve hot, garnished with a dollop of extra cream or sour cream and extra fresh dill or parsley for garnish.

Notes

For a lighter version, you can substitute the heavy cream with half-and-half or whole milk. The soup can be stored in the refrigerator for up to 3 days.
