  4. Tip the pistachio and sugar mix into a large bowl. Add in the almond flour, lemon zest, salt and baking powder to a large bowl and stir to combine.
  5. Add the egg yolks, cooled butter and vanilla and mix again. The mixture will be very thick.
  6. In a separate, clean bowl, beat the egg whites until stiff peaks form. Add half of the egg whites to the pistachio mixture and fold in. Add the other half and fold until combined, being careful to not knock out the air.
  7. Pour the mixture into your prepared cake tin. Bake for 35 minutes before carefully loosely covering the tin in foil to prevent it from over browning. Bake for a further 10-12 minutes or until a skewer comes out clean. It has a nice, moist crumb. For my oven, it took 47 minutes in total.
  8. Allow the Pistachio Cake to cool in the tin for 10 minutes, before carefully removing the sides of the springform tin. Allow it to cool completely on the base before carefully removing it. Serve with a dusting of icing sugar, whipped cream and fresh raspberries.

    Note 1: Use unsalted, shelled pistachios. If you can only find salted, reduce or omit the added salt in the recipe.
