  3. Melt the remaining milk, butter, and white chocolate in a saucepan over low heat. Stir to combine the ingredients, then pour them into the pistachio paste and blend until smooth.
  4. Chill the pistachio cream in the refrigerator for at least 4 hours to firm it up (or make it a day ahead!)

  11. Assemble the cookies: Remove the pistachio cream from the refrigerator, transfer it to a piping bag, and pipe it into the indentations of the cookies. Optionally, sprinkle chopped pistachios on top.
