Instructions
- To prep the TVP add equal parts tvp and equal parts boiling water to a bowl with the vegan beef stock powder, mix well before covering and leaving to rest whilst you prep the other stuff.
- Slice your capsicum and broccolini into thin slices ready to stir fry.
- Dice your pico de gallo ingredients and set aside.
- For the chipotle mayo mix all of the ingredients together and add to a sauce bottle if you’d like to do a fancy drizzle topping.
- Fry the tvp until starting to brown then sprinkle in the paprika, cumin, garlic granules and oregano. Stir to combine.
- At the same time in a separate pan fry the broccoli and capsicum slices until soft.
- To serve add a layer of the rice & grain mix to the bowl and top with your protein and veggies. Add a sprinkle of cheese and a generous helping of the chipotle mayo.
